Misri Mawa is an old, traditional rajasthani sweet. And is extremely delicious and flavourful, no fancy ingredients,no preservatives or colours or essence ...just pure milk and mishri! And like other traditional sweets recipe it's flavour lies not in ingredients but in the procedure. I myself tried it thrice before getting successful 😊 So I can tell you all the tips to make a perfect Mishri Mawa:- 1. Keep boiling and stirring milk at high or medium high flame. ( For getting the white Mishri Mawa, low flame makes it darker) 2. You need to add lemon juice in diluted form and gradually. I took juice of one small sized lemon and could use just 3/4 th of it.Keep stirring after you add it. Just add two spoons at a time . We just need granules to get formed and not to curdle the milk . Moreover the granules don't get formed instantly but gradually you will notice them. If we add more lemon at once, milk curdles,the whey seperates and the ' chhena' that is formed will keep on getting harder as the milk reduces. And the Mishri Mawa will become chewy and not soft! 3. Add the 20% of mishri to the Mawa when it has completely cooled down because mishri loses water when comes in contact with warm things. So we don't prefer a runny texture of Mishri Mawa. ( Mishri Mawa is slightly thicker than rabdi and thinner than Mawa)5-10% of water leaving the sides is totally normal but the granules must be soft and not thick and chewy. 4. Keep stirring it throughout. You can definitely make a perfect Mishri Mawa, if you follow this recipe , keeping all the tips in mind.
