-------------------- 🍳 👩🍳INGREDIENTS 👨🍳 🥘-------------------
Onion(chopped)- 1 med size
Tomato(chopped)- 3 med size
Mutton- ½ kg
Turmeric powder- ¼ tsp
Red chilli powder- 1 tsp
Kashmiri chilli powder- 1 tsp
Coriander powder- 1.5 tsp
Cumin powder- 1.5 tsp
Garam masala powder- ½ tsp
Salt- 1 tsp
*Homemade Karahi Masala- 3 tsp
Whole cumin- 1 tsp
Whole Garam masala (1 black cardamom, 2 clove,2 cardamom, 5 black pepper and cinnamon stick)
Ginger garlic paste- 1.5 Tbs
Oil- 5 Tbs
Yogurt- 2 Tbs
Ginger- for garnishing
Green chilli-2
Green Coriander leaves- handful
*Homemade Karahi Masala
Coriander seeds- 3Tbs
Cumin seeds- 1.5 Tbs
Green Cardamom- 5
Black peppercorn- 1 tsp
Fennel Seed- ½ tsp
Fenugreek seeds- ½ tsp
Carom seed- ½ tsp
Cinnamon stick- 2
Black cardamom-1
Clove-4
Dry red chilli-2
Dry roast all the ingredients in a pan for 7-8 min on low medium flame. Coarsely grind them upon cooling.
Preparation-
1. Heat oil in a pan on medium flame. Add whole cumin and whole garam masala to it and fry for 30 sec.
2. Add mutton to the pan and fry for 1 min and add ginger garlic paste to it. Saute everything well for 3-4 min.
3. Add chopped onion, turmeric powder, red chilli powder, kashmiri chilli powder, coriander powder, cumin powder, salt and karahi masala. Mix everything well, cover and let it cook for 15-18 min.
4. Check on mutton after 15 mins, onion should be well cooked by then if not leave for some more time. Add tomato and little water once onion is well cooked.
5. Cover and let the mutton get tender. This will take around 20 min(the time can vary depending upon the quality of mutton).
6. Open the lid time to time and check on tenderness of mutton. Once mutton is well cooked saute the gravy for 1-2 min so that all the excess water is absorbed.
7. Add yogurt and saute the mutton well for next 3-4 minutes.
8. Add 1tsp karahi masala, garam masala, green chilli and green coriander leaves. Mix well and saute till oil starts oozing out gravy.
9. Cook further on low medium for 2-3 minutes. Switch off the flame and serve hot. Enjoy.
