Ingredients: The Pizza Dough: 240 grams of bread flour or 00 (double zero) pizza flour 1/2 tsp dried yeast 170 grams filtered or bottled water 4 grams of kosher salt 15 milliliters of olive oil Homemade Pizza Sauce 1 - 28oz can of D.O.P. Certified San Marzano Whole Tomatoes. Remember to only use the tomatoes and not the sauce in the can 3 tbls tomato paste 2 tbls dried Italian herb seasoning 1 tbls dried oregano 1 tbls garlic powder 1 tbls onion powder 1 heaping tbls white sugar 1 teaspoon salt Combine above pizza sauce ingredients in a sauce pan and purée with a immersion blender or conventional blender. Blend until tomatoes are puréed. Cook sauce over medium low heat for five minutes stirring occasionally. Let sauce cool. Make sauce the day before for best results. Preheat your oven to 550 degrees or as high as it will go. If you have a convection oven use the convection setting and heat to 550 degrees. Be sure to preheat your oven with your pizza steel or pizza stone in it. You can still make the pizza if you don’t have a pizza stone. Cook pizza for 8 minutes then rotate the skillet 180 degrees and cook for another 8 minutes. Remove pizza from oven and skillet and let pizza cool on wire rack for 5 minutes before slicing and eating. Enjoy! Feel free to comment with any questions or comments.
