Koki is a pudding made from black _eyed peas, black eyed peas is a special kind of beans that is consumed in whole grain form,but in Cameroon it's consumed like a pudding (koki beans pudding. This dish is consumed in many African countries like Nigeria.
#Ingredients :;
-3 cup skinless black _eyed peas
-1 1/2 cup of palm oil
-2 cup of water
-Pepper (optional)
-1/2 onions (optional)
-Spinach or cocoyam leaves
-Plantains/banana leaves/ alluminion foil
-Salt.
# Steps;
1-Washed the black eyed peas (koki beans).
2- Grind into paste by using any method.
3- Mixed the ground black eyed peas with the rest of the ingredients .
4- Wrapped in alluminion foil.
5- Place wrapped koki beans in a steam pot, allow it to cook for an hour ( depending on the wrapped size.
6- Within an interval of 15minutes add more water in the steam pot.
7- After one hour take it out and let it cool.
8- Slice it into pieces to serve with plantains .
This is actually a vegan diet( plant based) and it takes time to prepare the dish but it worthy.
