Probably this is the quickest egg curry recipe.This egg recipe or Anda recipe is a very light and comfort food. It can be also a 1 pot meal as starters or snacks and also can be serves as a delicious dish and fits very well with Rice, Chapati or any Indian Breads. The speciality of this curry is, the raw eggs are directly dropped in the gravy instead of adding boiled eggs. Thus its very healthy and also reduces the cooking time. Adding Cheese is an unique thing which you will notice while watching this recipe. Preparation Time : 5 min Cooking Time : 15 min Ingredients : 4 Eggs 1 Big size Onion Paste 2 medium size tomato paste 2 TSPN Ginger Garlic Paste 2 Tblspn Refined Oil / Olive Oil Grated Cheese 1 TSpn Cumin Powder / Jeera Powder 1 Tspn Coriander Powder / Dhaniya Powder 1 Tspn Cinnamon ( Dalchini) & Green Cardamom Powder Salt according to taste 1/2 Tspn Sugar 1 TBlspn Butter Black Pepper Powder 2 -3 Cheese Slices Method of Cooking : Step -1 Heat the Refined Oil / Olive Oil and add the Onion Paste. Fry it until it turns brown in Color. Add the Ginger Garlic Paste and cook for another 1 minute. Add the salt and sugar and mix well. Cook for 2 minutes and add the Tomato paste . Mix and cook well Step - 2 One by one add the turmeric powder, red chilli powder, Cumin powder, coriander powder and a little bit of salt. Mix and cook it for a minute Step -3 Add 1/4th cup of water and mix well. Spread the cooked masala evenly on the pan and add the cinnamon and green cardamom powder. Add the butter spread it evenly. Spread the cheese slices on the masala and drop the eggs on it. If required add a little bit of salt. Add Black Pepper powder. Cover and cook for 2 minutes. Step -4 Open the Lid and add the grated cheese. Cover and simmer for another 2 minutes. Serve it hot as a snack, starter or with Chapati, Paratha or Rice.
